The video is part of a culinary series, which features some of the country&#8217;s most renowned chefs and gives the world an insight into <span class=\"xn-location\">Qatar&#8217;s<\/span> expanding food scene.<\/p>\n<p>Secretary General of Qatar National Tourism Council and Group Chief Executive of Qatar Airways, His Excellency Mr. <span class=\"xn-person\">Akbar Al Baker<\/span>, said: &#8220;Working with Chef <span class=\"xn-person\">Noor Al Mazroei<\/span> to celebrate Qatar National Day gives us the pleasure of showcasing a local delicacy and bringing a small but integral part of <span class=\"xn-location\">Qatar&#8217;s<\/span> heritage to kitchens around the world.&#8221;<\/p>\n<p>&#8220;Our expanding culinary landscape blends the best of traditional flavours and dishes with modern twists and we look forward to welcoming guests to <span class=\"xn-location\">Qatar<\/span> to experience our rich and evolving food scene first-hand.&#8221;<\/p>\n<p>The rich and flavoursome rice dish, Machboos, is the national dish of <span class=\"xn-location\">Qatar<\/span>. Its depth of flavour comes from a combination of aromatic spices that produce a smoky taste. Served with a variety of meats, the dish is a favourite across the Arabian Sea.<\/p>\n<p><b>Chef Noor Al Mazroei Recipe:<\/b><\/p>\n<p><b>Ingredients:<\/b><\/p>\n<p><i>(Serves 2 \/ Prep time 20 minutes, cooking time approximately 1 hour)<\/i><\/p>\n<p>1.\u00a01 chicken<\/p>\n<p>2.\u00a0 2 cups of Basmati rice<\/p>\n<p>3.\u00a0 Half a cup of white onion, cubed<\/p>\n<p>4.\u00a0 Half a cup of tomatoes, roughly chopped \u00a0<\/p>\n<p>5.\u00a0 A quarter of a cup of chopped parsley<\/p>\n<p>6.\u00a0 1 tablespoon of grated garlic<\/p>\n<p>7.\u00a01 tablespoon of grated ginger<\/p>\n<p>8.\u00a0 2 green hot peppers<\/p>\n<p>9.\u00a0 4 tablespoons of Qatari bazaar (spice mix)<\/p>\n<p>10. 1\/4 cup of vegetable oil<\/p>\n<p><b>Qatari Bazaar:<\/b><\/p>\n<p><i>(Can be used for 10 -15 Recipe \/ Keep in an airtight jar and use as required)<\/i><\/p>\n<p>1.\u00a0 1 cup of cumin seeds<\/p>\n<p>2.\u00a0 1 cup of coriander seeds<\/p>\n<p>3.\u00a0 \u00bd cup of black lemon ground<\/p>\n<p>4.\u00a0 \u00bd cup of ginger powder<\/p>\n<p>5.\u00a0 \u00bd cup of cinnamon powder<\/p>\n<p>6.\u00a0 \u00bd cup turmeric powder<\/p>\n<p>7.\u00a0 \u00bd cup ground black pepper<\/p>\n<p>8.\u00a0 Tablespoon ground saffron<\/p>\n<p><b>Method of mixing Qatari Bazaar:<\/b><\/p>\n<p>1.\u00a0 Roast cumin and coriander until brown<\/p>\n<p>2.\u00a0 Grind and mix well with the remaining ingredients until all spices are blended<\/p>\n<p>3.\u00a0 Remove from grinder into a container until use<\/p>\n<p><b>Method:<\/b><\/p>\n<p>1.\u00a0 Prepare your ingredients: Chop the onion, combine ginger, garlic and hot peppers in one bowl<\/p>\n<p>2.\u00a0 Wash rice before soaking in water for an hour<\/p>\n<p>3.\u00a0 Heat the oil in a large pot over medium-high flame and add correct spice, Qatari Bazaar, garlic, ginger, tomatoes, green pepper, lemon, salt and leave until the mixture blends and withers completely<\/p>\n<p>4.\u00a0 Cut chicken in half and add into the pot until the mixture has turned the chicken red on both sides<\/p>\n<p>5.\u00a0 Add 3 cups of boiling water and reduce the heat to low, cover and simmer for 40 minutes<\/p>\n<p>6.\u00a0 Remove the chicken from the water, put it in an oven tray and cook on 190 \u00b0<i>C \/ 170 Fan \/ <\/i>375\u00b0F for 10 minutes<\/p>\n<p>7.\u00a0 Remove half of the water from the pot before adding rice and leave it on a low boil for 10 minutes until rice is cooked and has absorbed the liquid.
